  1. Prep:

    Preheat the oven to 400°F.

    Rinse potatoes under cold running water. Pat dry and cut into quarters.

  1. Mix

    In a large stainless steel bowl, add the dried potatoes, olive oil and lemon pepper seasoning. Using a spoon, mix until well blended. 

  1. Bake

    Spread potatoes on a large baking sheet in a single layer. 

    Roast in the preheated oven for 20 minutes. Flip them halfway through the roasting time. This allows all sides to brown evenly, giving you perfectly crispy edges and tender insides.

    Increase temperature to 450°F.

    Sprinkle the grated parmesan cheese over the potatoes, and continue roasting for an additional 3-5 minutes, or until the potatoes are tender and golden brown. Watch closely to avoid burning the cheese.
