My ultimate gluten free chocolate chip cookies recipe is proof gluten free cookies can be soft, chewy and oh so delicious!

Ingredients

1 1/3 cup Cup4Cup Multipurpose Gluten Free Flour (187 grams)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup Ghirardelli semi-sweet chocolate chips (6 oz.)
1/2 cup chopped walnuts

Instructions

Heat oven to 375°F. Combine flour, baking soda and salt in medium bowl.

Beat butter, brown sugar and granulated sugar in large bowl with electric mixer. Beat in egg and vanilla until light and fluffy. Blend in flour mixture.

Stir in chocolate chips and nuts. Cover bowl with plastic wrap and chill in the refrigerator 15-20 minutes. Drop dough by heaping teaspoonfuls onto baking sheet. Or use a #60 cookie scoop.

Bake 10 minutes. Cool on pan 5 minutes. Transfer to wire rack to cool completely. Store in an airtight container.
